Can homemade kombucha be as carbonated as store bought kombucha?

I know that many or most store bought kombucha have forced carbonation and that its not natural, while homemade kombucha has natural carbonation. Can homemade kombucha match the carbonation in the store bought ones? Have any of you succeeded?

is it better to use store bought kombucha for the Initial starter or to use a donated SCOBY? I used store bought kombucha to start my current batches, but in the past I used a SCOBY that was already used in many batches. Is there a difference between using one or the other? If I can hear the caps leaking carbonation, does it mean my F2 wont be carbonated at all? When I put the bottles to my ears I can hear carbonation leaking out. Will this completely prevent carbonation to build up, preventing the kombucha from being carbonate,or is it only leaking just excess carbonation?

Does it matter if I lay my F2 bottles on their side or do they have to be upright to get carbonated? Is there a differenece in carbonation levels if the bottle is laid down vs upright?

What do I do if i can't tell if my F1 is sour, sweet, or tart and it all tastes the same to me? It may sound weird, but I cannot tell if my F1 is sweet, sour, or tart. It tastes like all of them. I have 3 different batches going, one with green + black tea, another with green + white tea, and another with green + hibiscus, they all taste differently, but they also all taste slightly sour, weirdly sweet, and have a vinegary after taste. This has happened in the past also with other batches I have done, so I don't think it's because of the tea I used. How can I tell if it's done?

if my F1 is still a little bit too sweet, can I bottle it to have a natural flavor and the sweetness will replace the added sugar to create fizz? My F1 tastes a little bit sweet still, so I am wondering if I can just bottle it without adding sugar and if it will continue to ferment and become fizzy as if I added sugar, since it's still sweet from the F1.

Can I add more sugar and leave it to ferment longer if it didn't carbonate during F2? I bottled up some kombucha from my F1, some flavored and some not, I put about half a teaspoon of sugar per half a liter of kombucha, and nothing happened. I might have had my measurements wrong. If I want to put more sugar and leave it out to ferment longer, is that ok or will the taste start to get too acidic?

Top Answer: From my understanding and experience, yes. Even if you put it in the fridge but decide that you want it to ferment longer, you can. Just keep in mind that it will take it a bit to warm up to room temperature and to ferment to the point you want it to...

How do I make natural flavored kombucha have fizz? I want to just bottle the kombucha straight from F1 to a flip top bottle or to the final bottle, but I never get any fizz, it's even less fizzier than when I bottle it, the F1 has more fizz. What should the PH be of kombucha through the different stages of fermentation? I know the PH is pretty high when starting F1 with the sweet tea, but, should the PH also be at 2.5-3.5 for each fermentation? Meaning, should the end of F1, F2, and F3 be 2.5-3.5?

How long does home brewed kombucha last in the fridge? I made kombucha and put it in the fridge less than a week ago, and it has a bit of a weird taste. It's as if the herbs I used to flavor them were left in and either lost their taste or have too much of their flavor, but they were not left in, I took them out. Is there a limit to how long kombucha can stay in the fridge? Does it matter if it was opened or not? My thought is that maybe because I opened all of them to taste, they lost their freshness?

I cannot get my non-flavored kombucha to fizz, what am i doing wrong? I have tried everything I can, but I just can't seem to get a non-flavored kombucha to fizz. I have a green + black tea kombucha for F1, I have tried transferring it to a flip top bottle with no sugar, with some sugar, with a lot of sugar, even left it for almost 7 days in F2 after a 14 day F1, and no matter what, I get no carbonation at all, just a more vinegary taste. Any tips?
